All FSE's, or other businesses that produce grease or other viscous materials, must have an approved properly designed Grease Control Device (GCD) per WVSD Ordinance Code. GCD sizing will be based on plan submittal and review as part of the application process. All GCDs require regular maintenance and cleaning to keep the operation of GCD efficient. Frequent inspections will be performed by WVSD to insure all FSEs are complying with the maintenance requirements of their WVSD issued permit.
Best Practices for FSE's
For your use to help you realize the most financial benefit through proper GCD maintenance and best kitchen operation practices.
